I love finding a healthier version of traditional recipes. This one for Lemon Bars is among the favorites at my house! There was a time when I had to use up my frequent flier miles for magazines or i’d loose them, so last year I was getting about 10 different magazines a month! Now not so much anymore. However, I did love all the recipes i’d find in Women’s Health, Self, Fitness, etc. This is a recipe I kept but that I tweaked a little bit-turns out delicious every time.
Ingredients:
1 stick butter (cut into cubes)
1.5 cups flour + 2 tbs
2/3 cup sugar + 3 tbs
3 eggs
1/2 tsp baking powder
1 tbs Water
2 lemons (zest from 2 lemons plus juice)
1 tbs powdered sugar
Directions
1. Coat a brownie size baking pan with nonstick spray; set pan aside.
2. In a small mixing bowl, combine 1.5 cup flour and 3 tablespoons sugar; cut in butter until crumbly. Pat mixture onto the bottom of prepared pan. Bake in a preheated 350-degree oven for 15 minutes.
3. Meanwhile, in the same bowl, combine eggs. Beat with an electric mixer on medium speed until frothy. Add remaining sugar and flour, lemon zest, lemon juice, 1 tablespoon water, and baking powder. Beat on medium 3 minutes or until slightly thickened. Pour mixture over baked layer in pan. Bake 20 to 25 minutes more or until edges are light brown and center is set. Cool in pan on a wire rack.
4. Sift powdered sugar over top. Cut into 16 bars. Store in refrigerator.
