It all started when I ordered a wedge salad at a restaurant and was completely blown away. How could something so simple taste so good? Crisp iceberg lettuce, creamy tangy blue cheese dressing, crunchy bacon, and juicy tomatoes—it was perfection. I came home determined to recreate it, and after a little testing I found the perfect blue cheese dressing (from Serious Eats—it’s the best). Now this wedge salad has become a staple in my kitchen, sometimes as the classic wedge and sometimes tossed over romaine for a more traditional salad. Either way, it’s pure heaven on a plate.
Why You’ll Love This Wedge Salad
Crisp, refreshing, and hearty – the cool crunch of iceberg lettuce is perfectly balanced with savory toppings.
The best homemade blue cheese dressing – creamy, tangy, and way better than anything from a bottle. Here’s the recipe I use
Packed with flavor and texture – smoky bacon, jammy eggs, fresh herbs, and blue cheese crumbles make every bite exciting.
Restaurant quality at home – you’ll feel like you’re dining out, without the price tag.
Tips for Success
Use very cold lettuce – keep your iceberg chilled until you’re ready to cut and serve for maximum crunch.
Jammy eggs are key – cook eggs in boiling water for 8 minutes, then run under cold water or transfer them to an ice bath for that perfectly soft, golden yolk.
Slice bacon thick – crispy, meaty pieces of bacon add the best crunch and flavor. Cooking the bacon can be done in advance
Don’t skip fresh herbs – dill and green onions add brightness that balances the richness of the dressing. I have used dried dill and freeze dried chives in place of fresh when I don’t have them.

Customizations
Swap the lettuce – if you prefer a classic salad, use chopped romaine or butter lettuce instead of wedges.
Go lighter – use turkey bacon or skip the bacon for a vegetarian option.
Extra veggies – add cucumber slices, shredded carrots, or radishes for more crunch.
Different cheese – not a blue cheese fan? Try feta for a milder but still tangy flavor.
Egg-free – leave off the hard-boiled egg if you’d like; the salad is still plenty hearty.

Serving Suggestions
Serve as a starter salad before steak, grilled chicken, or salmon-it’s a steakhouse classic for a reason.
Enjoy as a light main dish with crusty bread on the side. I eat this salad with 2 hard boiled eggs, instead of 1, all the time for lunch.
This wedge salad proves that simple ingredients can come together to create something unforgettable. Whether you serve it as a show-stopping starter or as a fresh and satisfying main dish, the combination of crisp lettuce, creamy dressing, smoky bacon, and bright herbs is always a crowd pleaser. Once you try it, you may just find yourself craving it on repeat, just like I do.
