This week’s meal plan is full of variety and will get your week started off right. From a tasty meal on the grill to a soup for those chilly nights – it’s that time of year where you can enjoy a great variety!
A few notes on this week’s meal plan:

Grilled citrus chicken drumsticks
- The marinade is made up of lemon, lime, and orange.
- Drumsticks are incredibly affordable. But if you don’t have drumsticks, you can use any chicken you’d like.
- The longer you marinade, the more flavor the chicken will have.
- The recipe also includes stovetop directions for when grilling season is over
Tomato white bean and noodle soup
- A super affordable recipe, made with basic pantry ingredients
- This is a thicker/more dense soup. If you prefer a more brothy soup, add more broth or water to this recipe.
- If you feel like getting fancy, emulsify the tomatoes before cooking them or add browned onions to the soup.
- This is a great on pan dinner or great dish for a party

- A serving of these fries are less than 500 calories and even less if you serve them as an appetizer portion
- This is a gluten free recipe, but you can also make it with regular all-purpose flour and it’s delicious.

Chicken Meatball Banh Mi Sandwiches
- This recipe is from the 100% Real: 100 Insanely Good Recipes for Clean Food Made Fresh cookbook.
- I make a large batch of my quick pickled Asian vegetables to use when making this sandwich.
- If you’re looking for a shortcut, use frozen meatballs instead of making from scratch.
- Also, you can quickly make a spicy mayo by mixing a sauce like Sriracha with mayonnaise.
