  • 1 Sheet pan
  • 1 Blender or food processor

Ingredients

For the sheet pan chicken, sweet potatoes and broccoli

  • 2 medium sweet potatoes peeled and cubed (about 4 cups)
  • 1 head broccoli cut into florets
  • 1.25 lbs thin sliced chicken breasts
  • 1-2 tsp Tajín seasoning or substitute with chili powder, sea salt, and lime zest
  • 1 tsp garlic powder 2 cloves garlic, crushed
  • 1/2 tsp onion granules or onion powder
  • 1-2 tsp brown sugar for sweet potatoes

Cilantro Yogurt Sauce

  • 3/4 cup Greek yogurt
  • 1/2 bunch cilantro about 1/4 cup
  • 1 handful fresh dill optional, or substitute dried dill weed
  • 1 lime juice of lime
  • 1 clove garlic
  • 1 tsp honey
  • 1 heavy pinch of salt

Instructions

For the sheet pan chicken, sweet potato and broccoli

  • Preheat oven to 425°F.
  • Line a sheet pan with parchment paper or lightly grease it
  • Spread sweet potatoes on one side of the pan, sprinkle with brown sugar, and toss.
  • Arrange the broccoli and chicken on the other side
  • Season the chicken, sweet potatoes, and broccoli with Tajín (or spice alternative), garlic powder, and onion granules
  • Drizzle everything with a bit of olive oil
  • Bake for 30 minutes, until chicken is cooked through and sweet potatoes are fork tender

For the cilantro yogurt sauce

  • Blend all ingredients until smooth.
  • Taste and adjust seasoning if needed.
  • Serve as a drizzle over the chicken and veggies or as a dip on the side.

    My favorite baked chicken is Jalepeno stuffed chicken. Pound the breast thin, stuff with fresh jalapeno and cream cheese. Roll up and dredge in panko. Bake. Yum. This week I added some pepper jelly to the cream cheese. Extra kick was great

    Yum! I love sheet pan recipes because it’s one pan to clean! They are fun to make, family’s favorite and super easy! I love to switch it up with salmon bites, cod or flounder. Add some Cajun seasonings and that will get your metabolism kicking.
