Spice Rubbed Tilapia 2 ways

My fiance actually came up with this awesome spice rub last week when I was feeling too lazy to cook, I made it again this week and must say, it is very tasty!

   

Ingredients:

  • 1 Tbs Chili Powder
  • 1 Tbs Garlic Powder
  • 1 Tbs Cumin
  • 1 Tsp Salt
  • 1 Tsp pepper
  • 3 Tilapia Filets
  • 2 Tbs Olive Oil

The above spice rub is good for 3 4oz Tilapia fillets with a generous amount of rub, if you like it with a little less of a kick, just use half the amount of all the spices.

Directions:

Mix all the spices in a bowl, then take one piece of Tilapia and cover it with the spice rub with your fingers. Put a pan on medium-high heat and heat the olive oil, then one at a time add the spice rubbed Tilapia. Cook each side about 5-7 minutes, only turning once (otherwise the fish will over cook and fall apart.)

Way 1: Fish Tacos

Sauté 1 cup frozen corn, 1 red pepper, 1 can black beans (optional) and ½ an onion in a little olive oil. Place 1/2 of a spiced rubbed Tilapia filet on a flour tortilla with a few spoonfuls of the corn-pepper mixture. Serve with Chips and Salsa.

Way 2: Fish Salad

To make a nice salad dressing, combine juice of 1 lime, 2 tbs olive oil, a dash of salt, pepper, and parsley and whisk together. Take salad and place it on desired eating dish, cover with ¼- ½ of the salad dressing, and place fish filet on top.
