Weekly Meal Plan 3/21/22 – 3/27/22

In this week’s meal plan, I wanted to include a few items that were a good mixture of snack or meal; meaning some people consider it a snack and some consider it a full meal.  Either way, there is a great mixture of recipes to help with your week of recipes!

Notes from this week’s meal plan:

Chocolate Cherry Biscotti

  • Great to give as a food gift or enjoy with your favorite morning coffee.
  • You could also try dipping it in hot chocolate.

Scrambled Eggs and Toast Recipe

  • Use a good pan – we have this smaller nonstick pan, it’s a Calphalon pan and came with this set of two.
  • Use a spatula– when cooking eggs, it’s best to use a silicone spatula, Ben LOVES spatulas so we have so so many of them, we love this colorful set.
  • Cook the eggs low and slow – for scrambled eggs, it’s best to cook them over medium-low heat, don’t rush it, if you cook them on high it will dry them out.
  • Remove pan from heat – remove the pan with eggs from the heat as soon as they start to pull back from the pan, don’t let them overcook, because eggs continue cooking from residual heat of the pan.
  • Start the toast when you add the eggs to the pan

Antipasto Skewers Recipe

  • If you can’t find marinated mozzarella balls, you can use Italian salad dressing to dress plain mozzarella balls.
  • For salami, I like using Sopressa or Genoa
  • You can use smaller wooden skewers if you’d like to yield more skewers

Carne Asada Fries

  • This is a great on pan dinner or great dish for a party
  • I made this recipe from the Skinnytaste One & Done cookbook
  • A serving of these fries are less than 500 calories and even less if you serve them as an appetizer portion

Chocolate hazelnut date energy bites

  • Only 3 ingredients
  • These energy bites definitely have a hint of Nutella taste to them, with no actually Nutella used.
  • Use a good food processor. I use this food processor, it really makes a difference texturally
  • Process the nuts first, then add in the dates and other ingredients, this will keep you from having uneven chunks of nuts
  • Use a cookie scoop to make even size balls, then roll with hands
  • Fun little cupcake liners make the energy bites super enjoyable (we eat with our eyes too, right? And how cute are these?)
  • Let your energy balls refrigerate for an hour or over night (and store in the fridge) this will allow them to harden and come together.

5 ingredient cinnamon coffee

  • This recipe can be made hot or iced
