Let’s welcome the warmer weather and summertime with a deliciously refreshing 5 ingredient strawberry mint daiquiri recipe!
Happy Friday everyone, or, should I say happy Five Ingredient Friday everyone! If you’re new to the SweetPhi blog, welcome! Every Friday I post a recipe with 5-ingredients or less and my cookbook: Fast & Easy Five Ingredient Recipes: A Cookbook For Busy People is coming out this summer (my cookbook was just included in The 30 Most Exciting Cookbooks of Summer by Epicurious!!!) I absolutely love easy 5-ingredient recipes, and I also absolutely love Instagram, @philiakelnhofer as a way to connect with others and share what is happening behind-the-scenes in the sweetphi kitchen. I also share cooking tips, recipes I’m testing, pictures of my garden (where the mint in the recipe comes from) and when I’m out and about (throughout travels like when I visited my bff Lynn in Charlotte, NC or when I’m exploring my city: Milwaukee).
So of course I shared when I went to a food truck festival on a beautiful summer day. Does the city you live in have food trucks? We have some here in Milwaukee, but I work out in the country where there are none, so when we went to the Street Eats 2016 festival I was in seventh heaven (it reminded me of when I was in Portland!) It was sunny, the sky was blue, and the delicious street food was in abundance. We had some macaroni and cheese pizza, this crazy amazing waffle that was almost candied and had peanut butter cream and was topped with candied bacon and bananas – sooo good, and some pita sandwiches and fries. We were at the food truck festival with my in-laws and our friend John, who you may remember from these delicious raspberry collins cocktails.
Before we left the festival, John and my hubby got these super summery strawberry cocktails. Fresh strawberries in cocktails in the summertime = amazing.
When I saw the fresh mint I have growing in my garden, I immediately thought it would be fun to make a version of a cocktail that has fresh strawberries and includes mint, enter strawberry daiquiris! The strawberries in the cocktail are nice and sweet, and the mint gives it a nice freshness. In making the strawberry mint daiquiris I used these tools: cocktail shaker, muddler, bar spoon , and a cocktail strainer. When I started making the cocktail, I wasn’t sure what the end color would be like because you strain the mixture after shaking it. I was so shocked at how vibrant the color was, it’s such a gorgeous and bright cocktail, it just screams summertime!
Last weekend I really could have used this cocktail with all the exciting things that happened: 1-my dog, Clover celebrated her 8th adoptiversary and 10th-11th birthday, she’s my little old lady, when I got her her entire nose was black, now it’s grey (I just love her lopsided ears – see her birthday picture below)! And 2-several of my 5-ingredient recipes were featured in BuzzFeed’s article of 23 delicious vegetarian recipes with 5-ingredients or less!!!!It was so exciting, and it was actually my hubby who was looking over my shoulder when I logged in to my blog dashboard when I was working on this how to make a DIY sandwich bar post and was like “what’s that spike in traffic” (I have a little graph on my dashboard that gives an overview) and I then did some digging and found that it was from the BuzzFeed article (thank you BuzzFeed!!) I’m thinking with a strawberry mint daiquiri in hand, all weekends can be amazing?

5 Ingredient Strawberry Mint Daiquiri
Ingredients
- 3 scant tablespoons sugar 3 bar spoons of sugar
- 1 shot of fresh lime juice juice from one lime
- 5 strawberries cored and halved
- 5 mint leafs
- 2 shots of white rum
Instructions
- Pour 3 bar spoons of sugar into a cocktail shaker.
- Add a single shot of fresh lime juice and stir it to dissolve.
- Add in strawberries and muddle.
- Add in mint leaves and 4 ice cubes.
- Pour in two shots of white rum.
- Place top on the cocktail shaker and secure, then shake vigorously for about 30 seconds.
- Pour the cocktail through a strainer into a glass and enjoy!
Notes
- If you want to make more than 1 strawberry daiquiri, simply double or triple the ingredients
