Yesterday, I had the pleasure of seeing one of my little sisters for a few hours…she is super sweet, super smart, super ‘sharp’ with comments, super supportive…all around SUPER, you spend some time with her and all you do is want to spend more time with her. She told me a few things that really stood out…she said “If I’m a fan of your blog, which I am, you’re just not quenching my thirst, I want more!” that could easily be explained by the fact that I was on vacation (in case you missed my post with photos on that, click here), or the fact that I have a job I absolutely love at True Botanica (a company that makes natural health products like nutritional supplements, creams and cosmetic, the lip balm, Hand & Body cream, Refreshing foot cream and sea salt are out of this world! The arsenal of products I have, love, and use, is huge-you should see my tiny bathroom!) but the truth is, she’s absolutely right, I love blogging and need to post more! Blogging is something I have really come to enjoy doing more and more, and I love cooking, baking and then sharing what gets created in my tiny kitchen with you awesome blog readers….so for all of you that read this blog, a big THANK YOU!
The second thing she said is that she usually picks a recipe of mine and then makes it on the weekends or special occasions, and that she wanted to know more what I eat that’s more on the simple side and only has a few ingredients, which is where the idea of Five Ingredient Fridays came from!
So on Fridays, I’ll post a recipe or idea with Five or fewer ingredients! Since my sister is a vegetarian, I thought I’d kick of the Five Ingredient Fridays with a vegetarian one, this Open faced Pesto, Tomato and Mozzarella Sandwich is easy, delicious, and I had it for lunch today!

Ingredients
- 1. 2 slices Ezekiel sesame bread
- 2. 2 Tbs Pesto
- 3. 1 small tomato sliced and seeds and innards removed
- 4. 4 slices Fresh Mozzarella
Instructions
- Spread pesto on two slices of bead. Next add slices of tomato, then put mozzarella on top.
- It is good to eat like that, but for added deliciousness, put in a toaster oven or regular oven on 450 for 10-15 minutes until the cheese is all melted, then allow to cool for a few minutes before enjoying!

I think this sandwich would be perfect for a new lunch idea! It’s quick and easy and is really tasty…cool that he knows what Ezekiel bread is-I always have some in the freezer because it is so delicious and perfect for sandwiches!
