Weekly Meal Plan 6/7 – 6/13

In this weekly meal plan, you’ll find a few of my favorite breakfast recipes and plenty of great options for lunch and dinner too!

Notes for the Weekly Meal Plan:

  • 3 Ingredient Banana Pancakes Recipe
    • Various topping options:
      • maple syrup
      • powdered sugar
      • fresh sliced strawberries or blueberries mixed with sugar
      • chopped toasted walnuts or pecans and honey
      • Greek yogurt mixed with honey
      • Recipe can easily be doubled, tripled, quadrupled depending on how many bananas you have.
  • Vegetarian Japanese Pan Noodles
    • I like making crispy tofu as a protein with this dish. To make crispy tofu, all you do is toss extra firm tofu in a little corn starch, and then sear it in a pan in a little bit of oil and a little bit of the sauce you’ve made for the noodles.
  • Air Fryer Falafel Bowls Recipe
    • If you don’t have an air fryer, the falafel can be baked on a cooking spray lined sheet pan at 375 degrees for 15 minutes, or they can be fried in canola oil (bring 1-2 inches of canola oil to a slow boil in a deep saucepan or pot, carefully lower in the falafel balls and fry for 2 minutes, then flip with tongs and cook for another minute, or until balls are golden brown).
    • Assemble bowls as instructed.
  • 5 Ingredient Breakfast Tacos Recipe
    • I used a mild chorizo (no picante) and a sharp cheddar for this recipe, but you could choose a pepper jack cheese or spicer chorizo if you want more kick to the recipe.
    • You can also use any kind of breakfast sausage you would like. Bacon would be great!  Or even a plant based sausage.
  • Sour Cream and Chive Turkey Burgers Recipe
    • These burgers can be cooked in a pan, they can be baked (350 for 30 minutes) or they can be grilled.
  • Summer Roasted Vegetable Lasagna
    • You want about 4 cups roasted veggies, can be any combination of veggies
    • Vegetables can be roasted/grilled ahead of time
    • Lasagna can be assembled ahead of time and baked at a later time (350 degrees for 45 minutes, let cool 20 minutes before serving)
    • Can be frozen either cooked or uncooked
  • 5 Ingredient Air Fryer Beef Tenderloin Roast Recipe
    • I like to serve my 5 ingredient air fryer beef tenderloin roast recipe with a side of roasted balsamic vegetables and potatoes.
  • 5 Ingredient Grilled Hot Chicken Sausages
    • I love to pair these with this Antipasto Skewers Recipe! They are a great cold appetizer and super easy to make!
