I’m sharing this zucchini recipe roundup because don’t you feel like if you plant zucchinis, you always end up with approximately 500 in your garden? Ok, I’m exaggerating ever so slightly, but really, all of my friends that have gardens seem to have a plethora of zucchinis. When I planted zucchini once (years ago) it just took over and I got so many! So, I love to have recipes on hand to be able to use up all of the fresh produce come August.
Plus, I mean, how cute is Ben with his giant zucchini?! It’s like as tall as him lol. I ended up chopping up that giant zucchini and grilling it when we were Up North (read more in the latest Catching Up With The Kelnhofers). I cut it into rods, then I drizzled it with olive oil and sprinkled it with salt/pepper/oregano/garlic salt and then grilled it. It was amazing!

Summer roasted vegetable lasagna – this is a new recipe that I think I’ve already made at least 5 times this summer. It works great as a freezer meal and you can simply use whatever veggies you happen to have at your house.
Peanut butter chocolate chip zucchini cookie bars – I mean, adding chocolate chips and peanut butter make everything delicious! And we’ll just call them healthy because they have veggies in them, right?

Zucchini banana nutella swirl loaf – zucchini breads always remind me of Nick because it was one of the first food things I learned that he loved. So, I’ve been playing with different varieties of zucchini loaves ever since! This is one of my faves.
Chickpea zucchini veggie burgers – ok, I know I say this a lot but THIS is definitely one of my favorite recipes. Or, for sure, one of my favorite vegetarian recipes. It is just so full of flavor!
Balsamic grilled vegetable side dish – an all time fave of my readers (and my family!). So delish and perfect for grilling season.
Zucchini kale lasagna – loving lasagna when I need to feed a group/family and always looking for ways to make it a touch more healthy this one is gluten free and the noodles are made with zucchini!
Corn and zucchini salad – this recipe is SO easy and can be used as a pizza topping, as well as a salad.
Skinny zucchini banana chocolate chip muffins – This recipe is from another blogger, my friend Monique from Ambitious Kitchen. Her recipe for these muffins are so good I just had to include them in my zucchini recipe roundup. I make them all summer long and they turn out perfect every time!!
Zucchini au Gratin – this is a great side dish that’s super tasty and an easy way to use up some of that zucchini from your garden! Plus, you can never go wrong with a bread crumb topping.
