I am always looking for an easy lunch sandwich to grab or even a light dinner. When I made this recipe for 5 ingredient pesto chicken salad bagel sandwiches I knew I had found just the thing! These chicken salad sandwiches are easy to make and are made with only 5 ingredients (chicken, pesto, mayonnaise, spinach and bagels)-perfect for this weeks Five Ingredient Friday.
In our house, Nick always claims to not like chicken salad. But I’m telling you, he LOVED this recipe. And you may have seen that he is also a big fan of another one of my 5 ingredient chicken salad recipes. So, I’m going on record saying that he does, in fact, like chicken salad!
This recipe could not be easier to make. Seriously. I like to make a bunch of chicken on Sunday’s to keep in the refrigerator to use all week. I started doing this a couple of months ago and it’s seriously the best. Or you could buy an already cooked rotisserie chicken and use that!
For the base of this recipe, chicken, you need about two cups. You can cook up some chicken breasts and cut up into small pieces or you can simply use the meat from a rotisserie chicken. Once you have your chicken, simply combine with pesto and mayonnaise and your filling is already done.
Take some spinach (or greens like arugula) and lay it on your bagel and put a scoop or two of that delicious filling on top. And that’s all! A super easy, filling meal that everyone will love.
I could not get enough of this sandwich and I already told you how much Nick liked it. But even better, all three kids loved it (yay for toddler approved lunches)! For the twins, I just gave them little bites of the filling and pieces of the bagel – a deconstructed baby bagel sandwich if you will lol.

- 1 lb. cooked chicken breast, diced or meat from 1 rotisserie chicken (approx. 2 cups diced chicken)
- 2 tbs. pesto
- 1/4 cup mayonnaise
- 1/2 cup spinach, divided
- 4 bagels or 8 pieces of bread
- If using chicken breasts, cook and cut into small pieces. If using a rotisserie chicken, shred chicken. You need a total of approx. 2 cups chicken.
- Combine pesto, mayonnaise and stir, then add the chicken and stir really well to combine.
- Divide spinach between sandwiches and top with chicken salad.
This recipe makes 4 sandwiches of medium/smaller size or 3 bigger sandwiches
