Arugula salad with grapefruit, pistachio and feta
Ingredients
- 1 5oz container baby arugula
- 1/2 small red onion very thinly sliced
- 2 small grapefruits cut/sliced
- 1/2 cup shelled pistachios lightly salted
- 4 oz feta cheese crumbled
For the dressing
- 4 Tablespoons extra virgin olive oil
- 2 Tablespoons White wine or champagne vinegar
- 2 Tablespoons Grapefruit juice
- 2 teaspoons honey
- 1/2 teaspoon garlic powder
- Heavy pinch Kosher salt
- A few grinds pepper optional
Instructions
- Add all salad ingredients to a bowl or platter
- In a separate bowl add all dressing ingredients and whisk. Whisk until well combined. Before serving make sure to give it a stir, dressing separates a little when sitting.
