Arugula salad with grapefruit, pistachio and feta

Arugula grapefruit pistachio salad is a fresh and vibrant salad recipe featuring grapefruit, feta cheese, pistachios, red onion, and a homemade citrus vinaigrette. This easy side dish is perfect for entertaining, holiday meals, or adding a burst of flavor to any dinner.

Ingredients

  • 1 5oz container baby arugula
  • 1/2 small red onion very thinly sliced
  • 2 small grapefruits cut/sliced
  • 1/2 cup shelled pistachios lightly salted
  • 4 oz feta cheese crumbled

For the dressing

  • 4 Tablespoons extra virgin olive oil
  • 2 Tablespoons White wine or champagne vinegar
  • 2 Tablespoons Grapefruit juice
  • 2 teaspoons honey
  • 1/2 teaspoon garlic powder
  • Heavy pinch Kosher salt
  • A few grinds pepper optional

Instructions

  • Add all salad ingredients to a bowl or platter
  • In a separate bowl add all dressing ingredients and whisk. Whisk until well combined. Before serving make sure to give it a stir, dressing separates a little when sitting.

Notes

I like to serve this salad on a platter vs. a bowl because everyone gets more even toppings this way (in a salad bowl the toppings fall to the bottom).

    I think it’s my Greek Salad = so light for the hot summer – Tomatoes/Red Onion/Green Pepper/Cucumber/Greek Olives and Good Feta – Toss with good olive oil and sprinkle with oregano – preferably dried on the stem and good flaky salt.
