I heard the phrase ‘Mexican Monday’ on the radio and got inspired so here is an amazingly delicious recipe for Mexican Lasagna

Ingredients
- 1 medium onion chopped
- 1 packet taco seasoning
- 1 tbs salt and pepper
- 2 tbs extra virgin olive oil
- 1 lb Lean Ground Turkey
- 1 lb Frozen Corn
- 1 can Medium Green Chiles diced
- 4 oz Sharp Cheddar shredded
- 4 oz Part Skim Mozzarella cheese shredded
- 1/4 cup Water
- 1 can 15oz black beans, rinsed and drained
- 3 to matoes diced
- 15 Corn Tortillas
Instructions
- Preheat oven to 400. Chop the onion and in a large frying pan add olive oil and onions, then add taco seasoning and salt and pepper. Fry for about 3-4 minutes, and then add the turkey and the water. Cook until the turkey is almost all cooked through (about 5 minutes) and then add the chiles and corn, cook for 2 minutes, then add the black beans and tomatoes
- Spray a baking dish with cooking spray, then to assemble lightly spread filling mixture on bottom, then sprinkle with a little of the grated cheese, then add a layer of 5 corn tortillas (I used 4 whole, and then split one in half) then add another layer of filling, sprinkle some cheese, another 5 corn tortillas, and then the remaining cheese on top.
- Bake for 20 minutes and then let sit for 10 minutes before serving
