We make this recipe all the time at home! It is so easy and so delicious. Anytime I am asked to bring a dish to a dinner party, potluck or get together of any sort, I always think to bring these 5 ingredient roasted carrots because it seems like a fancy dish, but it’s super easy, and is a side dish made with only 5 ingredients!

What ingredients do I need for 5 ingredient roasted carrots?
- Carrots
- Hot honey (you can make your own homemade hot honey if you don’t have any – keep reading to learn how or simply buy hot honey – like this)
- Feta cheese
- Thyme (dried or fresh)
- Extra virgin olive oil
Before doing any cooking, I like to line my sheet pan with aluminum foil – it makes cleanup much easier! And I am all about easy!
Do you roast carrots with the skin on?
- You can! Or you can choose to peel them. For this recipe, I washed them and cleaned them up a tad, but roasted them with skin on.
For the hot honey, for convenience you can definitely buy some to have on hand – I like to use this brand. But you can certainly make your own hot honey by combining two simple ingredients:
- Honey
- Red pepper flakes

How to cook roasted carrots?
- Preheat oven to 400 degrees. Line baking sheet with aluminum foil.
- Peel and cut carrots into 2” long strips. Spread on baking sheet.
- Add a pinch of salt on top of carrots.
- Drizzle olive oil and add thyme.
- Roast for 15 minutes.
- Remove from oven. Add feta and hot honey on top.

- 1 lb. carrots
- 1.5 - 2 Tablespoons extra virgin olive oil amount you use depends on the amount of carrots
- 1/2 teaspoon thyme
- hot honey
- feta
Instructions
