These 5 ingredient vegetarian breakfast tacos are so simple and quick that I’ve been enjoying them for breakfast, lunch and dinner! Plus, the recipe is flexible enough to include your favorite ingredients.
I love tacos for breakfast and previously shared these breakfast tacos. But I thought I should share something for our vegetarian friends too. Delicious tacos don’t always have to have bacon, sausage or chorizo! Enter, these 5 ingredient vegetarian breakfast tacos.
What are vegetarian tacos made of?
You can add almost anything you like in a tortilla (on top of eggs) and enjoy a great breakfast taco. This recipe has the following ingredients:
- Green hot sauce
- Cheese
- Eggs (scrambled)
- Cilantro
- Small tortillas
You, of course, can get creative with ingredients, depending on what you have in your house. For example, I used a Mexican cheese blend on these vegetarian tacos, but you could use any cheese you like. Cheddar or mozzarella would be delicious too!
This recipe is so easy to make. But, just how easy is it to make these tacos?
Well, I cooked them with one hand while holding Sam in a carrier with the other hand. Multi-tasking at its finest!


If you have other ingredients you want to add as toppings, you really can’t go wrong. I might try an avocado next time!…But I’ll need two hands for that one, ha!

5 Ingredient Vegetarian Breakfast Taco
Ingredients
- 2 tortillas small
- 2 eggs scrambled
- 1/4 cup cheese cheddar blend or mozzarella
- Green hot sauce
- Cilantro
Instructions
- Scramble two eggs in skillet.
- Warm tortillas in microwave for 30 seconds. Add eggs into tortilla.
- Top eggs with cheese, hot sauce and cilantro. Enjoy!
