Weekly Meal Plan 11/15 – 11/21

This weeks’ meal plan is ready to go and full of delicious recipes.  Go through the plan, pick your favorites and create an easy grocery list.  Happy planning!

Notes from the weekly meal plan:

Zucchini Banana Nutella Swirl Loaf

  • This bread tastes even better after a few days because the sweetness from the banana really develops.
  • No extra sweeteners added!
  • This recipe freezes really well.  Just wrap in plastic wrap and enjoy whenever you need a delicious bite.
  • This recipe is adapted from Ambitious Kitchen’s recipe for skinny zucchini banana chocolate chip muffins.

Tuna Salad Recipe with Pickled Celery

  • This tuna salad recipe uses green onions instead of chopped raw red onions.  The green onions add a nice subtle flavor instead of being overpowering.
  • This recipe makes enough pickled celery for the salad, but I used the same ratios to turn an entire bunch of celery into pickled celery.

5 Ingredient Cheesy Cauliflower Bake

  • This recipe is for a side dish, but can easily be doubled for a vegetarian main meal.
  • A super easy recipe, making it perfect for a Monday night when you’re probably already exhausted.

Carrot Cake Coffee Cake

  • This will be a fluffy cake. If you prefer a thinner cake, use a 9 x 13 pan. It will still be fluffy, but just much thinner.
  • Simply double the recipe for a large group. Trust me, you’re going to want to!
  • Feel free to substitute your vegetable for any mild cooking oil – grape seed, coconut etc.

5 ingredient turkey taco salad

  • This post also includes 27 other salad recipes that I love.
  • If making this salad for eating at a later time just cook the ground turkey and salsa and store it in an air tight container in the fridge until ready to use.
  • This salad is good with both warm or cold ground turkey.  Alternatively you could use slow cooker salsa chicken as a topping (just put salsa and chicken in a crock pot on low for 6 hours and then shred when done).

Fruit and Nut Muesli Bread Rounds Recipe

  • This recipe is a re-creation of one of the items in the protein box from Starbucks.
  • You can freeze this recipe and have fresh bread waiting for you in your freezer whenever you need it.  To freeze them simply allow the bread rounds to cool completely, then store in a freezer storage bag. When ready to enjoy, remove a round from the freezer and allow it to come to defrost on the counter, or microwave for 30 seconds.
  • You can use 1 1/2 cups already made muesli, instead of the 1/4 cup each of the different dried fruit and nuts and omit the 1/4 cup oats

5 Ingredient Instant Pot Chicken Alfredo

  • You can use frozen chicken. If chicken is frozen, cook for 15 minutes if chicken breasts are stacked or on top of each other. If you are able to lay frozen chicken flat on the bottom of the Instant Pot, cook for 10 minutes. You want the breasts a little pink at this point so they don’t over-cook.
  • Once you’ve released the pressure on the Instant Pot, let it sit without stirring.  This will help the sauce thicken up.
  • If you prefer a thicker sauce, use 3/4 jar of water, instead of a full jar.

Roasted Vegetables with Fried Goat Cheese Salad Recipe

  • To perfectly fry goat cheese, freeze the goat cheese to harden it ahead of time. By freezing the goat cheese a little, it holds its shape, and doesn’t immediately melt when frying it up. YUM!
  • Use milk to get the breadcrumbs to stick. I tried it with both eggs and milk, and with eggs the goat cheese and breadcrumbs aren’t as delicate. It turns into something where your main flavor is thick breading. But, if you dunk the goat cheese in a little bit of milk and then coat the with breadcrumbs, you get this amazing light and airy texture and the goat cheese flavor is still front and center!

5 Ingredient Broccoli Egg Breakfast Bowls Recipe

  • This recipe is flexible – you can cheeses for your favorite or add additional toppings such as bacon or sausage.
  • Shortcut option: Use frozen broccoli  so you don’t have to spend time chopping.  If you use fresh broccoli, cook time will vary slightly.
  • Quick tip: once an avocado is at proper ripeness level, put it in the fridge to stop the ripening process.

Prosciutto Fig and Arugula Flatbread

  • You can make this recipe even healthier by using a whole wheat crust.
  • Get as creative as you like with toppings for flatbreads, but even the way you prepare this meal is flexible.  I prefer a crispy prosciutto, but you can easily leave it raw and still enjoy this dish.  Additionally, the spice level can be tailored to your liking as well – like things a bit more spicy?  Add more red pepper!  Or dial it back if you’d prefer a more mild flavor.

5 Ingredient Tomato White Bean and Noodle Soup

  • This is a great budget-friendly recipe with items you probably already have in your pantry.
  • You can make this recipe gluten free by using gluten free noodles and making sure the other ingredients you choose are gluten free!
