In this week’s meal plan, we’re recovering from all of the delicious turkey and leftovers we’ve been enjoying and re-setting for a season of more delicious food!
Notes on this week’s meal plan:
- Make delicious artichokes in 10 minutes, rather than the hour + they take without an Instant Pot.
- Tips for cleaning artichokes:
- Cut off tips of the leaves with a pair of kitchen scissors. You want to remove the tips because they have little thorns at the end of the leaves.
- Cut off the top of the artichoke using a sharp knife, cut off the top 3/4-1 inch of the artichoke
- Remove any small leaves on the stem. They don’t have any artichoke ‘meat’ or edible part on them.
- Remove excess stem. You want about 1-1 1/2 inches of artichoke stem, beyond that it’s very bitter.
- Recipe also includes a delicious dipping sauce recipe.
5 ingredient vegetable frittata
- You can use any combination of vegetables you’d like in this recipe
- This recipe reheats really well, so it’s great to make-ahead and eat all week.
- Instead of using raw onions (which can be a little overpowering in the mornings) try using chives or green onions, they provide the flavor while not taking over the other vegetable flavors.
Minestrone soup with parmesan croutons
- Prep this recipe and store in the freezer.
- Make this recipe gluten free by using a gluten free pasta or even rice or quinoa.
- You can switch up the beans and use your favorite bean.
- Use any vegetables that you have on-hand/are in-season. Just want to be sure you use a total of 2 cups.
- This is a super simple, no-knead bread recipe.
- Be sure to score the top of the bread to allow the bread to properly bake and expand in the oven.
- This recipe is made with a whole wheat crust but store bought will work as well!
- Used diced tomatoes or your favorite pizza sauce.
- Crisping up kale helps take away kale’s naturally bitter flavor.
5 ingredient overnight vanilla oats
- Overnight oats are a way to make/prepare rolled oats. You simple combine oats in liquid, let them sit overnight, hence the name overnight oats.
- This is a no-cook recipe!
- You can top this recipe with brown sugar and walnuts or substitute maple syrup and pecans or almonds.
Sweet and spicy Italian sausage sloppy Joe sliders
- Ready in under 20 minutes
- Serve these sloppy Joes on Kings Hawaiian sweet rolls as sliders, or on regular buns for more of a hearty dinner.
- They are a great party dish.
- The filling of these turkey sloppy Joe’s can be made and frozen and then heated when you’re ready to enjoy them, they make a great freezer meal!
- This dough is super easy to make and there is no long rising time, because the slow heat from your slow cooker does the work for you.
- For this recipe, I melt the butter in the microwave and set aside before starting to make the dough. I use a bowl and wooden spoon, but you could also use a stand mixer with a dough attachment to make the dough.
5 ingredient oven baked pork chop with mozzarella crumb topping
- Be sure to set a wire cookie rack on top of your baking sheet before setting pork chops on top. You want to use a wire rack so air circulates underneath and you don’t get any soggy bottoms (but it you don’t have one putting them directly on a baking sheet is ok too).
- The recipe calls for a generous amount of garlic salt – you can always adjust down to your taste.
- I use Italian seasoned Panko, but if you use plain Panko, just add in some simple Italian seasoning to help boost the flavor.
