- 3 Ingredient Banana Pancakes Recipe
- Various topping options: maple syrup, powdered sugar, fresh sliced strawberries or blueberries mixed with sugar, chopped toasted walnuts or pecans and honey, Greek yogurt mixed with honey
- Recipe can easily be doubled, tripled, quadrupled depending on how many bananas you have.
- Crispy Chickpea Shawarma Pita Recipe
- The chickpeas for this recipe can be made in an air fryer or on the stovetop.
- Vegetarian Japanese Pan Noodles
- To make crispy tofu, all you do is toss extra firm tofu in a little corn starch, and then sear it in a pan in a little bit of oil and a little bit of the sauce you’ve made for the noodles.
- S’Mores Bars Recipe
- You can make these bars up to 1 day ahead. Cool, after baking, cover the pan with foil and store at room temperature. To serve, remove from the pan and cut.
- Over time, the marshmallows will harden, but if you store them in an air-tight tin, the s’mores are good for several days.
- Chocolate melting tips:
- You could heat chocolate in the microwave using 50% power to prevent over-baking.
- If you don’t have a microwave, you can heat the chocolate in a large heavy bottomed saucepan over low heat, stirring occasionally, until chocolate melts.
- Skinny Banana Berry Chocolate Chip Muffins
- These muffins can be frozen. When they’re completely cooled put them in a ziplock freezer bag.
- To enjoy remove a muffin and remove the wrapping and microwave for 30 seconds (or until no longer frozen).
- Enjoy frozen muffins within 1 month of freezing.
- Avocado Toast with Hard-Boiled Eggs and Roasted Tomatoes
- I used this recipe for the roasted tomatoes!
- Instant Pot Asian Shredded Beef Bowls
- This dish is really good as leftovers. Keep the beef in the sauce/cooking liquid in the fridge (there will be a fat layer – the fat layer is much easier to remove after it has been cooled). The meat lasts for 5-7 days cooked in the fridge (but it never lasts that long for us).
- BLT Pizza Recipe
- Pizza crust and be store bought or homemade using my sheet pan pizza recipe and modifying it to make it smaller.
- Grilled Citrus Chicken Drumsticks
- These can be made on a grill or in the oven.
- I love to have a few sides with these drumsticks like this side salad, grilled bread, grilled broccoli, or 5 ingredient grilled corn with parmesan!
