Notes about this week’s meal plan:
- Avocado Toast with Hard-Boiled Eggs and Balsamic Roasted Tomatoes
- I use these balsamic roasted tomatoes for this recipe!
- Steak and Nectarine Salad Recipe
- If not making this salad for meal prep and enjoying it all at once, you can save time by making the vinaigrette in a large bowl and then adding the lettuce and other ingredients directly into that same bowl. You can also either grill or pan fry the steak.
- 5 Ingredient BBQ Chicken and Quinoa Bowls
- For more flavor, you can cook your quinoa in chicken stock or 1 tsp. Better than Bullion instead of water.
- Everyone has their own favorite BBQ sauce and I personally love to make my own or when I’m in a bit more of a hurry, I use one like this one.
- Power Greens and Potato Breakfast Casserole
- I use power greens (baby spinach, baby red and green chards, and baby kale) in this recipe, but feel free to use only spinach, or kale, or chards, or any combination of them.
- You can use frozen hash browns in place of fresh potato if that’s what you have on hand, shredded a potato is not always fun or quick.
- Strawberry Orange Protein Smoothie
- If you don’t have any orange juice on hand or don’t like the added sugar, you could simply use freshly squeezed orange juice from another orange (or add another orange in and omit the orange juice). If you like things a tad bit sweeter, this smoothie is also good with a dash of honey, or made with vanilla almond milk, or made with coconut water instead of water.
- Crispy Chickpea Shawarma Pita Recipe
- This recipe can be made using an air fryer or on the stove top!
- 5 Ingredient Breakfast Tacos
- I used a mild chorizo (no picante) and a sharp cheddar for this recipe, but you could choose a pepper jack cheese or spicier chorizo if you want more kick to the recipe.
- You can also use any kind of breakfast sausage you would like. Bacon would be great! Or even a plant based sausage.
- Eggless Chocolate Chip Waffles with Strawberry Cream Cheese Sauce
- For the strawberry cream cheese sauce, you could opt to use fresh strawberries instead of frozen. But if you do, the cream cheese sauce will not be as liquidy.
- Waffle note: depending on what type of liquid you use, you may have to add a little extra liquid for the batter if the batter is too thick. For example, if you use whole milk, use an additional tablespoon to 1/4 cup water, or if you use a thicker milk (like buttermilk) you may need to use a little extra liquid.
