This avocado toast recipe with chickpeas {aka better avocado toast…really, promise} comes from The Well Plated Cookbook: Fast, Healthy Recipes You’ll Want To Eat by Erin Clarke. The cookbook is full of 130 recipes for comfort classics, with a spin.

What I love about this cookbook is that it not only has good recipes (hopefully a given with cookbooks, but in this case, I know Erin did extensive recipe testing), but it is packed with useful information.

I was drawn to all the ‘pro tips’ and ‘market swaps’ and useful information throughout.

Erin, the author of this cookbook, is actually one of my friends IRL (in real life). She is an amazing writer; something I tell her all the time (every time I read her site, I end up spending an hour just reading her stories)! We used to have a cookbook club (mentioned here) where we’d cook out of different cookbooks (darn you corona, I miss those gatherings) we’ll definitely have to use this book asap!

Oh, and she also has a hugely popular blog called Well Plated. I’m so excited for her and the cookbook!

My son has always liked avocado toast. To be honest, I didn’t ‘get it’ …it’s just avocados on toast, right? I was a little skeptical. But as I was flipping through the cookbook, something caught my eye – “4 ways to use a can of chickpeas.”

I had all the ingredients (another thing I love about the book – there are no weird ingredients, she makes a point to talk about using commonly found ingredients to create healthier recipes) so I enlisted my toddler (he loves mashing things) and we made avocado toast with chickpeas.

It was so flipping good!  I feel like avocado toast sometimes gets a bad wrap because it’s a ‘hipster dish’ but it’s seriously now one of my most favorite things to eat.  I’ve had it 3 times this week alone! It’s delicious, healthy and so easy to put together!

Avocado Toast with Chickpeas

Equipment

  • Glass Mixing Bowl
  • Measuring spoons

Ingredients

  • 1 can chickpeas
  • 1 avocado medium, ripe
  • 3 Tbs. nonfat plain Greek yogurt
  • 1/2 tsp. kosher salt
  • 1/4 tsp. red pepper flakes
  • 4 slices whole wheat bread toasted

Instructions

  • In a large bowl, use a fork or potato masher to lightly mash the chickpeas, leaving the mixture fairly chunky.

  • Scoop the flesh of the avocado into the bowl with the chickpeas. Then add the yogurt, salt and red pepper flakes.

  • With a fork, stir to combine, breaking up the avocado and leaving the mixture with a bit of texture. Taste and adjust the seasoning as desired.

  • Divide the mixture between the toast slices, using the back of a spoon to smooth it into an even, thick layer. Sprinkle with a pinch of additional salt.

      This is like guacamole – it keeps just fine for a few days (I’d say 3) but it discolors a little – so I’d recommend adding a dash of lime or lemon juice to keep it from browning.
