If you’re looking for the ultimate light and bright summer pie recipe, look no further than lemonade pie! This lemonade pie recipe is so easy to put together, plus lemon is one of my favorite flavors to enjoy during the summer months.

I love a recipe that only requires a few ingredients.  It’s why I started my 5 Ingredient series and have a cookbook based on 5 ingredient recipes!  Seeing a short ingredient list always makes the recipe less daunting off the bat.
How to make the best lemonade pie
For this recipe, you only need four things:
  1. Lemons
  2. Pre-made graham cracker pie crust
  3. Sweetened condensed milk
  4. Eggs
The best ever lemonade pie with fresh lemon

To make lemonade pie, you just need to combine the egg yolks with sweetened condensed milk.   Then add in lemon  juice and pour into the pie filling!  Bake the pie, then chill and viola, you have a delicious dessert in no time!

This recipe was an idea based off of a reader comment that I received.  The reader makes it a little differently (although I am sure still delicious!)

On Facebook, every Friday, we ask a question of the week.  I absolutely love reading through people’s responses.  Last year we asked simple “what is your favorite dessert?”  One reader left a comment that had me thinking about lemonade pie for over a year (I kid you not).  So this is my year to finally make it and I’m so glad I did!

The reader was so kind as to send me their recipe for Easy Lemonade Pie, which I’ve included below:

  • Mix 1 ¾ cup milk with 2 sugar free lemon instant puddings (the 4 serving size).
  • Add 6oz of frozen lemonade concentrate that’s thawed to this and mix.
  • Stir in 8oz of cool whip.
  • Spread into crust and refrigerate for 4 hours to set.

Well that pie sounded so yummy, I knew I needed to try a lemonade pie of my own!  So, a big thank you to that reader for being my inspiration.

Lemonade Pie Recipe

This pie is perfect for summer and you only need 4 ingredients to make it!

Servings: 8 slices/1 pie

Equipment

  • Electric hand mixer
  • Glass Mixing Bowl

Ingredients

  • 2 large egg yolks
  • 1 can 14 oz. sweetened condensed milk
  • 1/3 cup fresh lemon juice about 3 lemons
  • 1 6oz. 9-inch graham cracker pie crust
  • Whipped cream for topping optional

Instructions

  • Preheat oven to 350 degrees.
  • Beat egg yolks with sweetened condensed milk - use a hand or stand mixer (mix for about 3 minutes, until well combined.) Stir in the lemon juice.

  • Pour pie filling into the pie crust.

  • Bake until filling is set and crust is starting to turn slightly golden brown (15-18 minutes). Let cool slightly and then refrigerate until well chilled (at least one hour).

    I am so glad you published this recipe. I do not use whipped cream or cool whip in any desserts due to digestive issues. It is hard to find a lemon, summery dessert without those ingredients. Your recipe is perfect! Have you tried using cookies instead of graham crackers? I used Aldi brand Pecan shortbreads. Pulsed in the food processor and added melted butter. Life changing! So good!

    I have made this pie 5 times in the last 2 months. Great “drop off” treat for homebound friends, great for social distancing on the deck! - 1 cup sugar
- 2 teaspoons cinnamon
- 1/2 cup water
- 2 cups mixed nuts or any single nut you prefer, like almonds, walnuts or pecans
- Line a baking sheet with parchment paper or wax paper. Have 2 forks handy to separate nuts.
- In a heavy-bottomed saucepan or skillet mix the sugar and cinnamon together. Then add the water and bring to a boil, stirring constantly. 
- Add the nuts and continue stirring over medium heat until they become shiny looking. They will look dry, when they look ½ shiny ½ dry, that’s when they’re done.
- Quickly pour onto the prepared baking sheet and separate with 2 forks. Allow to cool, then enjoy!

 Ingredients:
- 2 cups Mirepoix or 1 small yellow onion, 2 stalks celery, 3 carrots, all finely chopped
- 1 can (28oz) crushed tomatoes fire roasted or regular
- 2/3 cup chicken stock or you could use beef stock
- 2 bay leaves
- 2-3 lbs pork tenderloin or you could use boneless pork butt or shoulder, fat trimmed off
- 1 teaspoon Kosher salt
 Put ingredients in a slow cooker low 8hrs, high 4. Shred and enjoy

Save this recipe for 5 ingredient crispy onion hon Save this recipe for 5 ingredient crispy onion honey mustard chicken sheet pan meal!
- 4 boneless, skinless, chicken breasts
- 1/2 cup honey mustard dressing/dipping sauce plus more for serving
- 3 cups fresh broccoli florets
- 2 tablespoons olive oil
- 1 cup crispy fried onions
- Preheat the oven to 400°F (200°C) (optional - line a sheet pan with parchment paper or foil for easy cleanup.)
- Place chicken breasts on one side of the baking sheet and the broccoli on the other.
- Slather the honey mustard dipping sauce over the chicken breasts. 
- Drizzle the olive oil over the broccoli
- Sprinkle the crispy onions on top of the chicken and then on top of the broccoli as well. 
- Bake for 20-25 minutes until the chicken is baked through (internal temp of 165).
- Divide onto 4 plates and serve with additional honey mustard dipping sauce and enjoy

- 1/2 cup sun-dried tomatoes, not oil packed
- 8 oz. goat cheese
- 1/2 cup basil fresh, chopped
- 1 tsp. garlic powder
- 3 Tbs. milk, any percentage is fine
- Chop sun-dried tomatoes into small pieces.  Finely chop basil.
- Add goat cheese, garlic powder and milk in a bowl. Stir all ingredients together and enjoy!
- Tip - let this sit at room temperature for a little bit before serving so that it’s spreadable!
