This week’s meal plan features plenty of recipes that will help use up those fresh tomatoes in your garden! You can also find a full round up here. And, of course, plenty of other great recipes for you to enjoy.
Notes from this week’s meal plan:
One Pan Vegetarian Dumpling Stir Fry
- I love using a pot like this to make this meal!
Taco pizza recipe
- This is a great recipe to make with (and eat with) kids
- I used this recipe (but halved it) for the taco pizza dough
5 Ingredient Slow Cooker Pork Carnitas Tacos
- This recipe is easily scaled down: Simply make as many tacos as desired and save the remaining pork and tacos for leftovers. If you have leftover shredded pork, it stores really well: place the shredded pork in an airtight container and pour some juices from the slow cooker over the meat. This pork freezes and reheats very well. To freeze, place the shredded pork in a resealable plastic freezer bag and label with the date when it was made.
Avocado Toast with Hard-Boiled Eggs and Balsamic Roasted Tomatoes
- I use these balsamic roasted tomatoes for this recipe!
Antipasto Skewers Recipe
- If you can’t find marinated mozzarella balls, you can use Italian salad dressing to dress plain mozzarella balls.
- For salami, I like using Sopressa or Genoa
- You can use smaller wooden skewers if you’d like to yield more skewers
5 Ingredient Crispy Cheesy Air Fryer Chicken Dinner
- This meal goes well with a side of, Spinach salad, Oil and vinegar potato salad, or a side salad.
Tomato Rosemary Focaccia
- This recipe calls for two risings – it’s important not to skip that step!
Eggless Chocolate Chip Waffles with Strawberry Cream Cheese Sauce
- When making the waffles, you can either use buttermilk or make your own! To make your own, you simply combine milk and lemon juice and let it sit for 5 minutes.
- The recipe calls for using frozen strawberries. The water content in the frozen berries will help the sauce be more liquid. If you want to use fresh strawberries, the sauce will just be thicker.
- The strawberry cream cheese sauce was originally inspired by one that Ben picked out of the Let’s Cook: Elmo Cookbook (a cute kids’ cookbook). It was a recipe for strawberry cream cheese stuffed French toast, but we didn’t have 1/2 the ingredients, so we made a sauce and waffles instead.
Crispy Chickpea Shawarma Pita Recipe
- This recipe can be made in an air fryer or on the stovetop!
