Cold, refreshing, and super delicious, this 5 ingredient banana pistachio coconut smoothie will start your morning off on a sweet note.
I’d love to know – are you a morning person? I thought I was, but lately it’s been a real struggle to get out of bed and get going in the mornings. I’ve been relying on recipes that I can make easily, ones that don’t require a lot of time or prep work. If you feel the same as me tell me over on Instagram, @philiakelnhofer.
Enter, beloved smoothies. Smoothies are great because you can throw stuff in the blender, and have a delicious and nutritious breakfast all ready in a matter of seconds.
But I do have to say, I have a love-hate relationship with smoothies. I love them and make them over and over, but then get to a point where I cannot imagine having another smoothie ever…is it just me? Then like a few weeks later I’m all about them.
My favorite smoothies are always banana based- like this 5 ingredient green power smoothie, or this sore throat soothing smoothie – the taste and texture that is achieved when using frozen bananas in smoothies is second to none. I always seem to have frozen bananas in my freezer, I just peel and slice the bananas and wrap them in plastic wrap and then put them in a gallon freezer bag. I like having them individually divided because it makes it so much easier to just grab one packet and use it. If you don’t have frozen bananas, you could use fresh bananas and then add ice when blending.
Also, this year I have fallen completely in love with pistachios. They have an almost sweet hint to them, and in this smoothie- so good. The addition of coconut flakes gives the smoothie a hint of tropical flavor. I use a really nice blender and love that it really blends and grinds up the pistachios and coconut. I use a Dash Chef Series Blender – it costs half of what something like a Vitamix costs, and I have a friend who has a Vitamix but said she actually likes my blender better because the dials are easier to use and it blends so quickly! The point is…invest in a good blender that grinds and blends so that you have amazing smoothies every time.
In the pictures, I’m showing toppings on the smoothie. I would like to point out that that is not how I normally serve the smoothie, it’s just because the actual smoothie color is kind of blah – it’s like a dull yellowy with some brownish/green hues because of the pistachios…I would like to clarify that you can certainly make it this way, I normally just have it as a smoothie. I have mixed feelings on smoothie bowls, I guess I just don’t “get them” – is it like a cold soup? A smoothie soup? That doesn’t sound all that appetizing or realistic for when I’m trying to rush out the door in the morning.

Thanks for sharing! I use a similar recipe all the time when I’m entertaining people for breakfast, such a crowd pleaser. A little trick I use to get a great colour is adding spinach. A small amount goes a long way and doesn’t have an effect of the flavour.
Also to save time on removing shells I bulk make pistachio butter. Tastes incredible spread on fresh fruit!

I’m not seeing any listing of nutrition information. Where do I find it?

Hi Corethia, I do not have nutrition information with my recipes, you could use an online or app nutrition calculator easily with this recipe 🙂

Love pistachios and this smoothie looks so delicious! I love the flavors incorporated in it and it looks like a great fuel to start the day. BTW I am a morning person – 4:45am every day of the week to drag myself on the treadmill before I need to bring my daughter to school ( we leave at 6:45 AM). On the weekends I try to sleep until at least 630 and that feels like a treat!

I am going to try this recipe! It looks really good. I think the pistachios and coconut would go really good with banana. 🙂
Oh yes I am a morning person. I also have 2 kids, 4 and 1, so I have to be! My boyfriend sometimes let me sleep in until 6:30 or 7. We usually wake up at 5. Before the kids, I was getting up at 5-5:30. Of course, we go to bed early at around 9:30 (us) and 7:30 (the kids). I often plan my breakfasts in advance and I have no trouble making panackes, french toast or oatmeal in the morning. I do have time because we wake up early. Daycare opens at 7, we work at 7 or we get to work at around 7:45 depending on who gets the kids to daycare.
