In our weekly meal plan, I love to share recipes to help make your life easier! This week, I’m especially excited about grilling and am sharing a bonus recipe of one of my favorite grilled side dishes!
Some notes on the weekly meal plan:
- BELTCH Breakfast Sandwich Recipe
- You can also cook bacon in the microwave by laying slices between layers of paper towel and cooking for 3-5 minutes.
- The Whole Bowl – Tali Sauce Recipe {naturally Gluten Free}
- After making this sauce numerous times, I have found that it is best when made in a food processor – like this one (<–is the one I use), and you can buy the nutritional yeast online. Hope you enjoy!
- Vegetarian Sheet Pan Dinner (Mexican Kale Salad)
- This recipe makes two big salad bowls, or four small ones if you’re eating something else on the side.
- Sweet Potato Pancakes Recipe
- You can make many other kinds of fruit or vegetable pancakes. Use the above recipe and swap the puree of your choice for sweet potatoes. For example, you can make savory broccoli pancakes, squash pancakes, or carrot cakes, replacing the sugar Cheddar or Parmesan cheese for savory recipes.
- I usually make a double batch, cook them all, and then freeze them for those days we’re short on time.
- Greek Chickpea Salad in a Jar
- When I want to add a little more with this salad I love adding a side of pita chips or pita bread!
- Mini Naan Pizza Recipe
- The mini naan pizza recipe is for one singular naan pizza. It can easily be doubled/tripled or quadrupled for the whole family!
- Strawberry Orange Protein Smoothie
- If you don’t have any orange juice on hand or don’t like the added sugar, you could simply use freshly squeezed orange juice from another orange (or add another orange in and omit the orange juice). If you like things a tad bit sweeter, this smoothie is also good with a dash of honey, or made with vanilla almond milk, or made with coconut water instead of water.
- You can make this smoothie into a ‘smoothie bag’ by adding prepped strawberries and oranges into a freezer baggie, label it, and then when you’re ready to make the smoothie, just add the contents of the bag to a blender along with some water.
- Perfectly Baked Salmon
- For this recipe I use Mediterranean spiced sea salt (this is the one I use) but you can certainly make your own.
- Avocado Toast with Hard-Boiled Eggs and Roasted Tomatoes
- I used this balsamic roasted tomatoes recipe.
- 5 Ingredient BBQ Chicken and Quinoa Bowl Recipe
- For more flavor, you can cook your quinoa in chicken stock or 1 tsp. Better than Bullion instead of water.
- Easy Grilled Steak and Chimichurri
- I love to serve this grilled steak with french fries or these grilled sweet potatoes!
