When I first made this recipe I was so surprised at how easy it was! Since creating this recipe I’ve perfected it to be the perfect chickpea salad, you can make it ahead for meal prep and it’s a great high fiber lunch option!

Fiber & Protein Content Breakdown

  • Chickpeas (1 can, 15 oz): Chickpeas provide about 9-10 grams of fiber per 1/2 cup, and a 15-ounce can contains about 1.5 cups. So, this recipe contains approximately 13-15 grams of fiber from the chickpeas.
  • Red Onion (1/4 cup): Red onion contributes around 0.5 grams of fiber.
  • The recipe has approximately 13.5-15.5 grams of fiber for the entire batch. Since the recipe makes two servings, each serving provides about 6.75-7.75 grams of fiber.
  • This is a great option for a high-fiber meal, as it provides a substantial portion of the daily recommended fiber intake (25-30 grams for adults). Pairing it with whole-grain toast, crackers, or veggies can increase the fiber content even more!
  • Protein: for the whole recipe: 14.3-18.3 grams.
  • Per serving (makes 2 servings): 7.15-9.15 grams of protein.
  • This recipe is a decent source of plant-based protein, primarily from the chickpeas and Greek yogurt.

Ingredients for this chickpea salad

  • 1 (15-ounce) can chickpeas, drained
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons fresh dill, chopped (or 1 teaspoon dried dill)

  • 2 heavy pinches of kosher salt
