- Use any pasta you like when prepping this casserole and throw it in the freezer to enjoy on any night you need a warm comforting meal. If you’re thinking ahead, take the pan out of the freezer to thaw the night before for a shorter bake time.
- This recipe is one of my favorites. It’s another easy to put together casserole dish that everyone will love. Again, you can use a rotisserie chicken to shorten prep time if you’d like.
Pepperoni pasta salad in a jar
- If you’re going in to the office these days (and not working from home), packing a salad in a jar is a great option for lunch. This recipe is great because it includes chickpeas, pasta, pepperoni, cheese and greens – what’s not to love!?
- Another great egg dish that you can easily prep, freeze and eat when you’re ready. This frittata is made with salsa and sausage, but you can get creative and flexible with ingredients.
- We eat these waffles on repeat in our house, so anytime I make the recipe, I double it and make more for the freezer. That way, I always have some on hand.
- Quinoa is one of my favorite items to meal prep with because it’s neutral and you can add almost any flavors. Plus, it’s such a great source of protein. This dish is a great one to pack for lunch any day of the week!
