Baked BBQ Chicken and Avocado Salad

I love salads, but hate when they end up taking like 20 different ingredients to prepare.  That’s what I love this baked bbq chicken and avocado salad.  It tastes so good and comes together with 6 simple ingredients.

This easy baked chicken and avocado salad is one the whole family will love.  It’s made with:

  • Chicken breasts
  • BBQ sauce
  • Avocado
  • Romaine/coleslaw lettuce mix
  • Tortilla strips
  • Ranch dressing

Ingredients to make a baked bbq chicken and avocado salad

There are several tips/shortcuts I use to make this a super easy salad to make. The first is that I simply put bbq sauce on chicken breasts and bake them while I’m getting the other ingredients ready. You can use whatever your favorite bbq sauce is. Or, if you’re short on time, you could pick up a rotisserie chicken and just brush some bbq sauce on it an use that!

The second tip/shortcut I like to use with this salad is that I get a bag of pre-cut greens, it’s called “Fancy Greens” – yup, that’s the name on the bag lol!  The bag already has pre-cut romaine lettuce and a coleslaw mix and has tons of carrots, which is great!  I like that extra crunch, but don’t want to have to cut a carrot. If you can’t find a romaine+coleslaw mix, you could always get a bag of romaine and then a bag of coleslaw and mix them together.

This baked bbq chicken and avocado salad could also be made into a sandwich or wrap. If we are eating a salad, a great way to get my 3 year old toddler to eat it is to wrap it in a tortilla. He loves the BBQ chicken, avocado and crunchy tortilla bits, and he loves to dip things in ranch dressing, so I make it into a little tortilla and that way he also eats the greens (at least a few pieces).

Baked BBQ Chicken and Avocado Salad

Equipment

  • Baking sheet (Gold Touch)
  • Glass Mixing Bowl

Ingredients

  • 2 chicken breasts large
  • 1/4 cup bbq sauce
  • 1 bag about 4 cups romaine/coleslaw mix
  • 1 avocado
  • 4 tablespoons Ranch dressing
  • 1/4 cup tortilla strips (Santa Fe flavored are amazing!)

Instructions

  • Preheat oven to 425 degrees
  • On a non-stick baking sheet place chicken breasts, spoon/brush bbq sauce on top of chicken breasts and place baking dish in oven.
  • Bake for 30 minutes. While chicken is baking, put greens in a bowl. Slice avocado and put on top of greens.
  • Remove chicken from oven and slice and place on top of greens.
  • Sprinkle tortilla strips on top of salad and drizzle on ranch dressing.
  • Serve in 4 bowls or as one big salad, family style

Notes

This recipe would also be great as a wrap!

    This recipe looks delicious.
    I’d have to say my favorite salad is what I’d call August Salad – grilled chicken (or steak) with lettuce, basil, and tomatoes fresh picked from our garden topped with homemade Mediterranean dressing. ? ( Since I’m in Wisconsin and in the dead of winter – grocery store organic works?.)

    When I roast veggies for dinner, I always try to save some for a salad the next day. Roasted sweet potato and roasted zucchini are my favorites.

    I just made your Greek chickpea salad in a jar recipe and LOVED it! I wasn’t sure I’d like it since there’s no meat in it, but it was super filling and tasty! Otherwise, I love a good Cobb salad.

    A restaurant here in town has the BEST salad I’ve ever had! It’s a little sweet, and a little spicy. I have them add chicken as well, and it’s so yummy!

    Mixed greens, shredded cabbage, carrots, pickled red onions, radishes, bell peppers, crispy rice noodles, soy glazed cashews and pickles vegetables with a chili lime vinaigrette.

      I like organic greens such as red leaf lettuce and arugula with Persian cucumbers, pickled red onions, radishes and tomatoes with a simple extra virgin olive oil and rice vinegar dressing, salt and pepper. To make it a meal, I like to top it off Greek feta cheese and grilled chicken breast and sliced avocado.

    My go-to salad is one I’ve done my best to recreate from a local bar. I chiffonade kale, add sliced fennel that I’ve roasted with olive oil, salt and pepper, rough chopped castelvetrano olives and tons of finely grated parmesan. I toss it with a dressing of olive oil, lemon juice, dijon and salt and pepper. Even my teenagers are a fan.

    When I rarely get to a nice restaurant, I look on the menu for a beet salad!!! But for make-at-home, definitely pear/arugula/crumbly cheese/pecans or candied pecans! Going to try your BBQ chicken & avocado salad. My kids would even eat this!! And they will all give me their avocado. Win-win.

    A berry salad with spinach, raspberries, blueberries, red onion, crumbled feta and toasted sliced almonds with a raspberry vinaigrette. Simple to put together at home and the right sweet/salty/tangy combo.

    I’ve got to go with a good ole Caesar salad as my favorite! Seasons 52 has a delicious one with kale in it but I’m a sucker for pretty much any version. There’s just something I love about the dressing. I’m pregnant so I’ve had to take a step back from them lately but am looking forward to diving into a giant one here in another couple of weeks! 🙂

    My favorite salad is the “Antipasto Salad” at Field of Greens, a salad/wrap/soup/flatbread place near our house. It has lettuce, pasta, turkey, ham, provolone, tomatoes and pepperoni (but I always sub mushrooms for the pepperoni) and I get it with their avocado ranch mixed in. It’s always so cold & fresh. I’ve tried recreating it several times at home, but it never tastes as good as getting it there!

    Bolthouse Farm Salsa Dressing, spinach and Romaine lettuce, grape tomatoes, some colored peppers, and the warm ingredients of roasted sweet potato, seasoned chili & cumin black beans and roasted frozen corn.

    There are sooooo many good salads! It’s really hard to choose! I’ve been loving an arugula salad because I grow my own spicy variety in my back yard! But just yesterday I enjoyed a spinach salad, and I love an Asian salad! I have an amazing jalapeño ranch dressing recipe that would go well with this bbq chicken salad of yours! Please don’t make me choose!

    This looks good! My favorite salad is grilled chicken Cesar salad with apple, mandarin orange, walnuts and pecans. Creamy poppyseed dressing is a great option too.

    A BBQ Ranch Chicken Salad loaded with black beans and roasted corn is my go to anywhere. If it’s on the menu at a restaurant, I order it. Maybe time I finally make one for myself! Can’t pass up an American combo like Ranch and BBQ.

    We love chopped grilled chicken tossed w/ tzatziki sauce (preferably Hannah brand) on a bed of mixed greens, parmesan shaved on top and a few bacon bits, because what does bacon NOT go on? Sliced cherry tomatoes and a sprinkle of sunflower seeds too.

    That looks delicious and beautiful (my salads are never that pretty).

    One of my favorite salads is made with cold, leftover steak. Oh it’s so good. I usually add Romaine, blue cheese, and a homemade dressing (ranch, vinaigrette, etc.). If I have any salad veggies in the fridge (cucumber, tomato) I’ll throw in some of that.

    My favorite salads are simple homemade chicken salads. I’m weird and don’t like cheese or many dairy products. Even so, I have a super simple palate, so I’m still satisfied haha. This recipe looks perfect for me though because I love bbq chicken. I have to recreate it! Thanks for sharing.

    I love so many different kinds of salad, but if I had to pick just one, I would have to say it would be Greek Salad. If I’m making it for dinner I add thin slices of grilled chicken.

    We have a monthly potluck luncheon/meeting at work each month with 50 or more people attending. A surprise hit that I brought was Dill Pickle Potato Salad. I will definitely be making that again.

    I like simple salads with mixed greens, purple cabbage, grilled chicken is good and then add some pecan pieces or slivered almonds and some cranberries. I’m not a dressing girl, but I like to squeeze a lemon or lime all over.

      I get bored with salads so quickly, so yay for another option! Right now I’m loving a mixed green with feta, raw nuts (pecans and walnuts), craisins and homemade honey mustard vinaigrette.
