Craving waffles but don’t have eggs on hand? Or maybe you’re accommodating an egg-free diet? Whatever the reason, this eggless waffle recipe is here to save the day! One evening we decided we were going to have brinner (breakfast for dinner) because pretty much the only thing I had in the fridge was bacon. I put the bacon in the oven to cook and as I went back to the fridge to get out the eggs (we were just going to have eggs/bacon/toast) I discovered we had no eggs. Ooops. So I decided I’d just try my hand at creating some waffles to go with the bacon, because I’d made waffles from mixes that just require adding water plenty of times. I played around with the recipe and oh my goodness, I was so pleasantly surprised with the end result. And these have been my favorite waffles ever since!

  • Use Nonstick Spray: Even if your waffle maker is nonstick, a light coating of spray helps ensure easy removal.

Customizations

Tools to Make These Eggless Waffles Even Easier

  • Waffle maker: This is to make full-size waffles. It gives the waffles that perfect combination of crisp edges and a light, fluffy center, and mine are usually cooked in about five minutes.
  • Mini waffle maker: I use the DASH mini waffle makers too (I have two of them), and my kids love the little waffles! I found mine for around $10, so they’re an inexpensive and fun option for breakfasts, snacks, or making several mini waffles for the freezer. There’s lots of ‘shape’ options too!
  • Large cookie scoop: The batter thickens as it rests, so a large cookie scoop makes it much easier to transfer neatly into the waffle maker. It also helps portion the same amount for each waffle without dripping batter everywhere.
  • Wire cooling rack (this one is magic): Place the finished waffles on a wire rack in a warm oven while you cook the rest of the batch. The rack allows air to circulate around them so they stay warm and crisp instead of becoming soft on a plate.

This recipe makes four waffles.Ā  What I like to do is double the recipe and freeze a few, they freeze/reheat really well (I just pop the frozen waffle into a toaster).

Equipment

  • Waffle Maker
  • Glass bowls
  • Measuring cups
  • Large cookie scoop

Ingredients

  • 1 cup milk or water, or non dairy milk of choice*
  • 2 Tablespoons lemon juice juice from 1 lemon
  • 3 Tablespoons canola oil or other mild cooking oil like grapeseed, vegetable or coconut oil
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract optional
  • 1 1/2 cups all-purpose flour
  • 1 1/2 Tablespoons baking powder make sure your baking powder doesn't contain aluminum, see note
  • 3 Tablespoons sugar
  • 1 teaspoon lemon zest

Instructions

  • In a bowl combine milk and lemon juice and let sit for 5 minutes (this is essentially creating buttermilk, you could use buttermilk instead of this step). After 5 minutes add in canola oil, vanilla extract and almond extract (if using.)
  • In another bowl combine flour, baking powder, sugar, and lemon zest, stir to combine.
  • Pour wet ingredients into dry ingredients, stir, and let sit for 5 minutes (let the baking powder do it's thing - the mixture thickens up a bit and bubbles a little.)

  • Warm waffle iron according to manufacture directions. I have this waffle iron and love it so much!
  • Spray heated waffle iron with cooking spray and spoon batter into waffle iron, cook until done (mine is about 5 minutes). Repeat until all waffles are made.

*depending on what type of liquid you use, you may have to add a little extra liquid for the batter if the batter is too thick. For example, if you use whole milk, use an additional tablespoon to 1/4 cup water, or if you use a thicker milk (like buttermilk) you may need to use a little extra liquid.
**check to make sure your baking powder doesn't contain any aluminum in the ingredient list. Sometimes they add aluminum in the form of sodium aluminum phosphate and/or sodium aluminum sulfate – it’s sometimes added to double-acting baking powder to make it heat sensitive. Aluminum in baking powder is not harmful, but it can leave a slightly metallic and bitter taste in your mouth.Ā

    Delicious and fluffy. I used cashew milk and Earth Balance ā€œbutterā€ sticks for some of the best vegan waffles I’ve had. The lemon zest is a wonderful addition I hadn’t added to waffle batter before. These with 1-2 mini vegan chocolate chips sprinkled in each square pocket and topped with deep fried Quorn nuggets is a great ā€œChickenā€ & Waffles brunch

    Unfourtneatly, the waffles didn’t turn out. I’m not sure what the problem was but there was an odd taste too all the waffles. The waffles were fluffy though.

      Did you by chance mix up baking soda and baking powder? I’ve done that before making these and that causes an odd taste but makes them still fluffy. I’d definitely recommend trying these again though, I make them weekly in our house and there are hundreds of positive comments of people who love this recipe.

    This recipe is in my toolbox for quick breakfasts. It is great because it can be made out of pantry basics. You can dress it up with maple syrup or jams. I make it as puffy pancakes. Thanks you!

    Made these today with whole milk & they turned out great! My son is allergic to eggs and I was looking for an eggless waffle recipe and he ate the entire waffle šŸ™‚ I would say that’s a win! I really liked the lemon zest addition, it gave the waffles a bright & fresh flavor since waffles can be rich. Will definitely make these again – It’s a straight forward and delicious recipe!     Thanks for this recipe. You never let me down!!! YUM! The lemon zest is really nice. I used brown rice syrup to avoid the cane sugar in this batch, and coconut milk. Turned out great!

    Hi Phi;

    I tried it today morning ; came out fabulous …best till date . But only a small complaint – I also had a little bitter after taste ; may be baking powder proportions are too much actually I added only 11/2 teaspoon instead of tablespoon.
    May be next time will add only 1 tsp .

      I haven’t tried it this way, but I think it would work. I’d try maybe 350 for temperature and then check them for doneness after 15 minutes? Just a guess. Hope you love the recipe, let me know if it turns out.

      Thank you for your comment. The only way it would taste bitter is if you used baking soda instead of baking powder…it’s a common mistake (I’ve done that a few times myself resulting in bitter waffles) the measurements are correct in tablespoons with baking powder

      Yes you certainly can. I ran out of regular flour this morning and made them with self rising four and they turned out just as good (I added a little extra liquid, like 2 tbs more water/milk).

    I couldn’t get eggs this week due to the Covid19 buying frenzy, but we have a St Patty’s tradition of green waffles and bacon! We loved this recipe! Even my two picky eating kiddos requested I make it again šŸ˜‰ I did omit the lemon zest, and used vinegar rather than lemon juice for the buttermilk. Thank you for sharing!

    I had no eggs but was craving waffles, and my search for eggless waffles landed me here. I’m so glad! I was skeptical that my waffles would turn out thick and fluffy, but they were perfect! I felt that my batter was a little too thick per the recipe but I just added a little more milk and all was well. My lemon was already zested from a previous dish so I did without the zest. My kids loved them so much, their eyes were rolling in the back of their heads while they said, ā€œMmm so good.ā€ Thank you! This will be my new waffle recipe wether I have eggs or not!

    Do I have to use lemon zest? I’m usually a spontaneous ‘I’m making breakfast’ type person and I typically don’t have lemons on hand, but I keep lemon juice in my fridge. My daughter is allergic to eggs and I love waffles so I’m in desperate need for a good eggless waffle recipe.

      I’ve made this recipe with water before, so you should be fine without the lemon. The thing that the lemon+milk does, is that it forms a buttermilk, and that always gives waffles an extra little boost of flavor, but it’s not necessary. I think you’ll love these waffles, I’d love to know your feedback once you try them!

        It’s Easter morning in the middle of the 2020 “stay at home” mandate, and I’m never a well-organized person. I had thought to have waffles for breakfast, but realized when I went to get started that I’d boiled all my eggs two nights ago. This recipe absolutely saved my tail feathers!! I left out the lemon zest because my fella doesn’t tolerate citrus well and added in a generous dash of cinnamon (I also used brown sugar because I love it), and these waffles were GREAT!!! They are a nice dense waffle and not dry, and the recipe is a great size for my little family of three. THANK YOU for this recipe and saving my breakfast!

      Hey, just wanted to mention you can buy lemon zest at Kroger and other good sized grocery stores. A little bottle of it can last you a loooong time.

    I made this recipe and was so happy to have great waffles with no eggs. In addition to egg sensitivities, cane sugar is not my friend so I used a little maple syrup instead and they turned out great! Yum!

    My fiancĆ© is allergic to eggs and I’m in the market for all kinds of egg free recipes not just that he can eat but that we both enjoy. We always used to make the Krusteaz box ones but they recently added egg to the recipe. Such a bummer! This was the second homemade recipe we tried, And the second time is a charm šŸ™‚ These were amazing and the touch of lemon is a really yummy unique touch.

    Thank you so much for the recipe. My husband is allergic to eggs and I have been looking for a good waffle recipe and this is the best I have found so far. Just made them and they are crispy from outside and fluffy from inside. Hint of lemon is a great idea. Keeping this for all my future waffles.

    Both my grand sons have flies, and one can’t eat eggs. I made these using Bobs Red Mill Paleo flour. I used 1 Tbsp lemon juice to create my ‘ almond milk buttermilk’. That’s all the lemon juice I used. Did not use the zest, because not sure the babies would like it. The only problem I noticed is that they tend to stick more to the waffle iron. Easily solved with a shot of Pam. These waffles are fantastic. Had to make 2 batches because my husband and I scarfed one each from the first batch.

    After trying many egglees waffle recipies, I finally found a perfect crispy waffle recipies. But my waffles tasted bitter. I followed the recipient to the Top, but don’t understand the reason for it to be bitter.
    I fell the B powder could be causing it. Please help!!

      Hi! I mixed up baking powder and baking soda once and while they still came out good, they had this horrible bitter flavor. did you by chance mix the two up?

      I’m flustered, too- because I made these this morning trying to surprise my family with breakfast and they came out terrible. They had this bitterness and the flavor was terribly sharp- like licking lemon juice straight up. It left a chalky coating on my tongue and teeth. Not pleasant. I tossed the first batter and we tried again using vinegar to make the buttermilk instead of lemon juice, in case that was the problem- same result. I can’t figure out what else I could have done wrong… but as is, this recipe was not edible.

        Hi! I FINALLY have an answer after this happened to me. I’ve literally made the recipe 100s of times, and that’s not an exaggeration!
        It turned out it was when I had purchased an off-brand of BAKING POWDER! So apparently sometimes they add aluminum in the form of sodium aluminum phosphate and/or sodium aluminum sulfate – it’s sometimes added to double-acting baking powder to make it heat sensitive. Aluminum in baking powder is not harmful, but it can leave a slightly metallic taste in your mouth. Sure enough when I looked at the label I saw the aluminum in the ingredient list and when I purchased a baking powder without it again and made the recipe again, it was perfect as it should be. It was so bitter and gross with it in there, so THAT’S THE PROBLEM!!!! So sorry this happened to you, I’d love to hear if you check the bottle ingredients if you find it in yours.

    Sorry to report this did not work for us – absolute disaster of stuck to the waffle maker. The first waffle was so stuck I couldn’t get the waffle maker to open. My strong husband could NOT open the waffle maker! He had to use tools. So stuck. I decided (foolishly) to try again – I added more liquid to the batter and more oil to the waffle maker to prevent such sticking. This time I could at least open the waffle maker and it pulled the waffle apart with it all STUCK to both sides of the waffle maker. I’m frustrated I wasted so many ingredients and now need to pressure wash (or something) my waffle maker!!!!

      Oh my goodness- I’m so sorry to hear this! This is very surprising too!! I’ve literally made these waffles over a dozen times (the last time was two days ago) and I’ve never had a problem like what you’re describing whatsoever! What kind of a waffle maker are you using? Did you make any modifications to the recipe? Did you spray the waffle maker with cooking spray? I’m just trying to trouble shoot here, because I’ve literally never had anything remotely close to that type of an experience making these!

      My husband made these yesterday for the kids (our daughter has egg allergies), and they stuck to the waffle maker. I thought it was a fluke and he must have done something wrong. I’m making them now and I too am having an issue with them sticking to the waffle maker (even using non-stick pray)! I’m changing waffle makers to give it another go but if it doesn’t work, I’ll know it’s the batter. We ended up Peeling rolling the two halves off the larger maker and turning them into burrito waffles! ??? the batter is amazing flavor but not happy about the sticking issues.

        Thank you for sharing your feedback. I’m so stumped by this…I don’t know why it would stick if you’re properly using cooking spray/greasing your waffle iron! I’ve made this recipe countless times, I’ve even forgotten to use cooking spray and while it stuck, it came out with a little scraping at the edges.

    French Toast Bake is my favorite to have for Brunch! And on Mother’s Day, we went out for breakfast, my husband did all the prep work for the week, and cooked me a surprise dinner, and I was able to do some baking!

    We go to Benvenuto’s brunch every Sunday. It has made to order waffles, pancakes, omelets, and eggs benedict. It has delicious fresh fruit and all the rest of breakfast staples. We love it!!!!

    I will have hash brown and sausage casserole with my family. We used to always have this and a fruit bowl with my dear mother this was her favorite breakfast so we always celebrate her with this meal.

    I do love waffles (and that recipe looks delicious!), but my favorite brunch food is the Eggs Benedang at a local cafĆ©. It’s Eggs Benedict, but on top of fried chicken thighs instead of an English muffin or biscuit. SO good, and the perfect protein jolt to start the weekend.

    Everyone in our house loves breakfast food, we have BRINNER almost once a week! I’d say our favorite brunch consists of pancakes and fried potatoes. I personally love my cakes topped with caramelized bananas, walnuts and pure maple syrup.

    Those waffles look delicious! Waffles may be the best breakfast food. I like to make savory waffles with Old Bay seasoning, topped with crab. Instead of syrup, we use hollandaise. It is a little like eggs benedict.
